Add the cubed watermelon, 2 tablespoons of honey and lemon juice (if using) in the blender. Blend until smooth.
Taste and drizzle more honey until your desired sweetness is reached.
Pour into molds and freeze for a few hours or until completely frozen.
To unmold, run the bottom end of the popsicle mold in hot tap water for a few seconds to release the ice pops.
*This will work with other fruit combinations like watermelon-strawberry, strawberry-kiwi, pineapple-mango, triple berry combo or try other fruits that your family loves. Lemon juice and honey are optional if you’re using sweeter fruits.**The amount of honey is just a guide. Add more or less depending on your sweetness preference. Alternatively, white granulated sugar or other sweeteners can be used in place of the honey.
